I would definitely go with any Intel based one since they’re fast and the software is all migrating to that and is fast enough for most users. On Memory I would go with at least 1 GB, which is around where you’ll minimize memory pageouts which slow things down. Macs are setup to load everything they can into RAM so the more RAM the better.
A better question is do you want to buy a Mac with an Intel Processor, or one of the older G5s or G4s?
Personally, I would recommend picking up one of the first generation Intel Macs with the Core Duos. They are dirt cheap now (iMacs, Macbooks, Macbooks Pros) and no matter which one you buy, it should be plenty fast for all your needs for quite some time. Even the slowest Intel Mac (1.8GHz Core Duo) has plenty of years left in it’s life. Bump up the RAM to at least 1Gig if you can.
I recommend checking out your local craigslist page to find somebody that wants to upgrade to the latest and greatest. Pick up an Intel Mac and try to avoid the G5s and G4s to ensure software compatibility for years to come.
